Keto Loaded Faux-tato soup

Looking for a guilt free version of a classic hearty meal? Look no further! You’ll be dying to dig into a bowl of this creamy, cheesy, keto friendly soup as soon as you walk in the door! We know that your family will ask to have this again, and again. But they won’t believe it contains our protein powerhouse Natural Nutralean! Who says healthy can’t taste amazing?!

Whether your go to method is an Instant Pot, slow cooker or on the stove top, we've got you covered with this super versatile recipe!

Cauliflower Facts:

  • Very low in calories and high in vitamins. 
  • High in fiber. 
  • Great source of antioxidants. 
  • Low in carbohydrates.

INGREDIENTS:

  • 1/2 onion, finely chopped
  • 2 tbsp. butter or olive oil
  • 1 large head of cauliflower, trimmed and coarsely chopped
  • 3 cups chicken stock, plus a little more to thin soup if needed. NOTE: use 4 cups broth if using slow cooker recipe
  • 2 scoops Natural Nutralean
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 4 oz. cream cheese, cut into cubes
  • 1 cup grated extra sharp cheddar cheese
  • 1/2 cup heavy cream

OPTIONAL TOPPING INGREDIENTS:

Top with grated cheese, sour cream, crumbled bacon, and green onion for that true loaded baked potato taste!

DIRECTIONS:

Slow Cooker:

  1. Add chicken broth, veggies, salt and garlic powder to slow cooker.
  2. Cook on low for 6-8hrs.
  3. Add Nutralean to soup.
  4. Use an immersion blender, blender, or food processor to puree the soup to your desired consistency.
  5. Return soup to slow cooker, add shredded cheese and cream cheese. Stir until melted. 
  6. Add heavy cream and stir to blend. 

    Instant Pot :

    1. Cook onion in butter for 2-3 Minutes on Saute mode.
    2. Add chicken stock and cauliflower, garlic powder, and salt.
    3. Set Instant Pot to Manual High Pressure and cook for 5 minutes.
    4. Quick release the pressure on your Instant Pot when timer is up.
    5. Add Nutralean to soup. 
    6. Use an immersion blender, blender, or food processor to puree the soup to your desired consistency.
    7. Add shredded cheese, cream cheese. Stir until melted and combined.
    8. Add heavy cream and stir to blend!

    STOVETOP DIRECTIONS:

    1. Saute onions in butter, 2-3 min. 
    2. Add cauliflower, chicken stock, garlic powder, and salt.
    3. Adjust cook time to 20-30 minutes, until cauliflower is very soft. 
    4. Add the Nutralean to the soup. 
    5. Use an immersion blender, blender, or food processor to puree the soup to your desired consistency.
    6. Add shredded cheese and cream cheese. Stir until melted and combined. 
    7. Add heavy cream and stir everything together for a silky smooth soup!
