Keto Stuffed Peppers

4 bell peppers, halved seeds removed
1 lb ground beef
1/2 onion diced
1 clove garlic, minced
1/2 cup diced tomatoes
1 tsp Italian seasoning
1 cup riced cauliflower
1/2 cup parmesan cheese
1/2 cup low sugar pasta sauce
1/2 cup grated mozzarella cheese
Salt and pepper to taste
In a large skillet, cook ground beef, garlic and onion until browned.
Add in tomatoes and cauliflower, cook for 3-4 min.
Combine Nutralean into pasta sauce. Mix until texture is smooth and without lumps.
Add to meat mixture.
Mix in parmesan cheese.
Arrange peppers on a baking sheet.
Spoon filling in to peppers.
Top with mozzarella cheese.
Bake 375 degrees for 20-30 min
