Easy Bite-Sized Vanilla Pancake Muffins
These bite-sized keto vanilla pancake muffins are the perfect treat for breakfast, or even a snack. Pack them in your lunch bags with some syrup and you've got a great dip-able treat.
- 3 scoops Vanilla Nutralean
- 1/4 cup melted butter
- 4 eggs
- 1 cup milk of choice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/3 cup coconut flour
- Preheat oven to 400 degrees. Spray mini muffin pan or prepare baking cups.
- In a medium bowl, combine ingredients with a whisk until smooth.
- Fill each muffin tin 3/4 with batter.
- Bake for 10-12 minutes or until just slightly brown around the edges and a toothpick comes out clean. For full-sized muffins, bake for 20 minutes.]
