Egg Salad Lettuce Wraps


No more scrambling, trying to figure out what to make for lunch! These super quick, easy-to-make egg salad wraps are no "yolk!" Seriously packed with protein and fiber, they'll make lunchtime "egg-cellent" and because they are low-carb, they will leave you feeling full for hours!


Now let's get crackin'!

Makes 4 servings

 

INGREDIENTS:

  • 4 eggs, hard-boiled and peeled
  • Green onion, chopped (to taste)
  • 2 Tbsp. mayonnaise, regular/full fat (not light/fat-free mayo)
  • 1 scoop Natural Nutralean
  • Salt & pepper (to taste)
  • 4 Romaine lettuce leaves


DIRECTIONS:

  1. Add all ingredients to a medium-sized bowl
  2. Using a pastry knife (or wide-slot potato masher), chop, mix & mash all ingredients until consistency is creamy and thick
  3. Scoop mixture evenly into lettuce leaves


...Mmm...egg-squisite!
