Peanut Butter Protein Cookies



These are SO good and easy to make! I created these for my kids, as my youngest has a severe nut allergy, and of course, I want high protein, sugar-free treats for my family!

 

INGREDIENTS:

  • 1 Cup | Unsweetened Soy Nut Butter (or Unsweetened Peanut Butter)
  • 3/4 Cup | Baking Stevia
  • 1/2 Cup | Vanilla NutraLean
  • 2 | Eggs
  • (red and yellow food colouring, if wanted!)
  • Pumpkin Seeds (optional, for stems)

DIRECTIONS:

  1. Mix eggs, food colouring (optional) until well beaten.
  2. Add in Stevia and NutraLean until mixed well.
  3. Add in soy-nut butter.
  4. Spoon onto parchment paper, press down with a fork, add pumpkin seeds for stems. 
  5. Bake at 350 for 10-12 minutes.
  6. They will bubble in the oven, don't worry! They will turn out great!

Makes 24 cookies.
