Low sugar High Fiber Strawberry Shortcake

Summer is here, and we all want to be out on our decks enjoying treats with our friends and family - so we made a low carb & high protein 'berry' delicious Strawberry Protein Shortcake!

 

DRY INGREDIENTS:

  • 1/4 TSP | Salt
  • 1 TSP | Baking Powder
  • 1/3 Cup | Sifted Coconut Flour
  • 1/4 Cup | Baking Stevia
  • 2 Scoops | Vanilla Nutralean

WET INGREDIENTS:

  • 1 - 8 oz. PKG |softened Cream Cheese 
  • 4 | Eggs
  • 1/4 Cup | Butter, melted and slightly cooled

DIRECTIONS:

  1. Preheat oven to 350 degrees
  2. Mix dry ingredients together
  3. Mix wet ingredients together
  4. Add dry ingredients to wet slowly (mix half first, then another half)
  5. Coat mini muffin tin with coconut spray
  6. Bake for 12-13 minutes for mini muffins or 15 minutes for regular muffins
  7. Let cool
  8. Add Whipped cream, strawberries and enjoy
