Cauliflower 'Potato' Salad


Melanie has seriously outdone herself this time.  One of the traditional Island dishes to take to any family gathering is potato salad.  Traditional potato salad has a whopping 20g of net carbs per half a cup... yikes!  Thanks to Protein Treats, though, you can enjoy this delicious, hearty cauliflower 'fauxtato' salad without the carb-overload.  Plus, this recipe takes less than 15 minutes from start to finish - what more could you ask for?

Cauliflower Fauxtato Salad


  • 1 head of cauliflower
  • 3/4 cup mayo - full fat!
  • 1.2 tsp mustard powder
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 2 whole eggs - boiled and cooled
  • 1/3 cup chopped celery
  • 1/3 cup onion
  • 1 tbsp apple cider vinegar
  • 2 scoops Natural Nutralean



  1. Directions:
  2. Break your cauliflower into florets, just use your hands to get the perfect bite-sized pieces!
  3. Boil in a pot of hot water, or use a microwave and cook for about 10 minutes stirring halfway through.
  4. Once boiled, drain your cauliflower and put into a large mixing bowl.
  5. Dice pre-boiled and cooled eggs, add into the cauliflower.
  6. Add diced celery and onion, stir.
  7. Add dry ingredients: Natural Nutralean, mustard powder, garlic, salt and pepper, and mix well until completely coated.
  8. Complete by adding mayo and apple cider vinegar!
  9. Let chill in fridge for at least 30 minutes, or overnight for best results.

I just made the cauliflower salad recipe and it is Delicious. I used organic frozen and baked it until slightly golden. My new favorite side.
