Mini Skinny Cheesecake


Baking cheesecakes doesn't have to be hard! These crustless Mini Skinny Cheesecakes are light and so easy to make, you will be shocked! Loaded with protein and ber, they are extra filling and they freeze well too.

Ingredients: 

  • 2 pkgs cream cheese
  • 4 scoops Vanilla Nutralean 
  • 1 egg 
  • 2 egg whites 
  • 1 cup plain cottage cheese 
  • 1/2 cup unsweetened milk (coconut, soy, almond) 

Directions:

  1. Preheat oven to 350.
  2. Mix all ingredients together in a stand mixer.
  3. Spray muffin tin with coconut oil and fill the tins about 3/4 to the top with batter.
  4. For regular muffn tins, bake for 25-30 minutes.
  5. For mini muffin tins, bake for 15 minutes. Let cool.

Recipe makes 24 servings
