Oat Flour Cinnamon Vanilla NutraVegan Pancakes

Naturally, we knew this meant coming up with some delicious oat flour recipes! After hearing testimonials from our customers who have both an anaphylactic nut allergy AND an allergy to coconut flour, not to mention how hard it can be to find allergen-friendly recipes that are high-fiber and high-protein... we knew we had an opportunity to shine.
As expected these pancakes were insanely delicious with an extra boost of Vanilla-y goodness thanks to our plant-based powerhouse Vanilla NutraVegan.
Adventures with NutraVegan
This was my first adventure with oat flour and I have to say... I am hooked. To be honest, I didn't even know oat flour existed. After speaking with one of our lovely customers (shout out to Teresa) I decided that I had to give it a whirl. I've always loved oatmeal cookies, so finding that same familiar oat taste and soft, fluffy oat texture in these vegan protein pancakes was SO exciting.
I've been SO impressed with my recipe adventures featuring our NutraVegan products. Not only does our plant-based prebiotic protein powder blend perfectly into my tried-and-true recipes... but it actually mixes even better than our incredible Nutralean into hot liquids. (Which I didn't think was possible)
With Nutralean, it's a good idea to pre-mix it into a bit of water or heavy cream if you're adding it into a hot liquid so it doesn't cook the protein and curdle. You can still use it to make yummy treats like this hot chocolate, though.

Where to purchase oat flour/ how to make your own
I purchased my oat flour from Amazon, but I have to admit - I was sad to find a warning label written on it afterwards that states "may contain peanuts". This wasn't mentioned anywhere in the listing. Yikes.
However, I have since learned that it's SUPER easy to make your own! Simply throw your oats in a food processor or even a coffee grinder and grind them until they're a flour consistency.
Tips & Tricks
- One of the tips I read about baking with oat flour that I found incredibly handy: don't let it sit for too long! The longer it sits, the more the oats will soak up the liquid.
- With this recipe - if you're using a homemade oat flour, use 1 & 1/2 cups not the mentioned 1 & 1/4 cup.
