Scrumptious Carrot Cake Muffins



Imagine this: a warm, moist muffin fresh out of the oven slathered with butter just waiting for you to take the first bite. Now imagine that same yummy muffin helping you lose weight! Typically when you decide it's time to lose weight, things like muffins and donuts are the first to go on the "do not eat" list. Nutracelle's Nutralean is the ideal protein for weight loss, feeling full for hours, and of course for making all of the delicious treats that you thought you'd have to give up to reach your goals. 

INGREDIENTS:

  • 2 cups shredded carrot
  • 2 cups coconut 
  • 1 cup egg white 
  • 2 cups Natural Nutralean 
  • 1 large (798 ml or 28 oz) can pumpkin purée 
  • 2 tsp baking soda 
  • 2 tsp baking powder 
  • 2 tsp cinnamon 
  • 1/4 tsp cloves 
  • 1 tsp nutmeg 
  • 1 tsp ginger

DIRECTIONS:

  1. Preheat over to 350. 
  2. Mix dry ingredients together. In a separate bowl, mix wet ingredients and then combine.
  3. Spray cupcake pan with coconut oil and bake for 15 minutes.

Serve warm with protein ice cream or let cool and top with cream cheese icing.
