Perfect Zucchini Carrot Bread

This delicious zucchini carrot bread makes great muffins too. Just shorten the baking time and when a toothpick comes out clean you'll have delicious zucchini carrot muffins. Add a little cream cheese icing and you have an amazingly healthy and decadent snack.


  • 1.2 cup Vanilla Nutralean
  • 1 cup zucchini, shredded finely and squeezed 
  • 1 cup shredded carrots
  • 6 eggs
  • 1/2 cup plain greek yogurt
  • 1 tbsp. coconut oil, plus extra if greasing the pan
  • 1/3 cup coconut flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tbsp. cinnamon
  • 1⁄2 tsp. nutmeg
  • 1 tsp. apple cider vinegar


    1. Preheat oven to 350.
    2. Mix all ingredients until moist and pour into a loaf pan lined with parchment paper.
    3. Bake at 350 for 45-55 minutes until a toothpick comes out clean.

Recipe makes 18 servings
