INGREDIENTS:

  • 1 tbsp coconut flour
  • 1 tbsp Natural Nutralean
  • 1 tbsp Greek yogurt
  • 1 tbsp water
  • 1 tbsp olive or avocado oil
  • 1/4 cup egg whites
  • 1/2 tsp psyllium powder (make sure it's powder!)
  • 1/4 tsp baking powder
  • pinch of salt


DIRECTIONS:

  1. Mix all your ingredients together and whisk until batter is smooth. 
  2. Pour into a greased microwaveable dish that is the size of the muffin you want to have. 
  3. Microwave for about 2 minutes (a bit more or less depending on your microwave's power).
  4. Let cool and use a fork to cut it in half (see video at 4:30)
  5. Toast in your toaster and enjoy as an Egg McMuffin or as toast!

So Easy!!

Why did it take me this long to try this recipe!? This was the PERFECT low-carb solution to my bread craving!! Eating mine with some natural peanut butter. Yum!!
